1 - It tastes nice.
2 - It goes well with pretty much any food.
3 - Its easy to make a meal with it. Sandwich, Cheese on Toast etc.
4 - It was readily available when other food were not in older years. Cheese is easily made, cheap to distribute, lasts a long time without spoiling.
5 - People are lazy. The fact they can simply put some cheese on something will disambiguate flavours of food, nice or nasty, and bring about a pleasant smell and taste.
6 - As it goes well with anything, and people tend to stick to what they like, they will add it to things over time.
7 - There are many variables of cheese. Cow/Goat/Sheep, and also colours and flavours. Truly something for everyone in the cheese market.
