I won 1st place in the Santa Cruz mountains chili cook off one year.
Second place was a rattlesnake chili.

The answer is Celery seed.
yes crushed celery seed makes your chili hot without your mouth being on fire. Made my nose run when I ate some today.
Try it sometime.
But don't use your coffee grinder for the seeds.
You'll be sorry
